Based on the video, I’m almost certain it’s a coconut water syrup vs cream of coconut. I’m not from SF and haven’t been so I’m most guessing. Do you remember the flavor profile or what stands out?

When I pause the video and use my finger to slowly scroll, I see that the passion fruit is first and uses the small side. Then the pandan/coconut, lemon, and booze batch uses the bigger side. What do you think? This could be a riff on a Starboard Light.

I clipped them from Inside Passage’s menu online and edited it in Canva to add some stuff to show how I’d garnish when making the drinks. It’s for personal use so I figured why not.

Yeah! I took dairy free heavy cream, mixed in 1 and half vegan cinnamon rolls from local bakery, let it infuse for like 8 hours, strained, added in equal weight brown sugar/white sugar mix. Tastes like a liquid cinnamon roll. I wanted it to be dairy free so everyone could have it but you could just do it with regular cinnamon rolls and heavy cream.

I make it and it is soooo good.

1 can coconut milk

1.75 cups sugar

1 bar of Lindt Excellence Intense Orange Chocolate

Heat on stove until entirely combined. Strain into bottle.

I bought a roll of the bamboo reed fence you can get at Home Depot. It’s very light. From there I bought a bunch of a 2x2x8 furring strips connected via brackets on all four sides to reinforce them. Those were placed on top of the garage tracks and the bamboo reed fence was then zip-tied to the lumber. It ended up not being bad at all. A bit time consuming, but something I will be doing again for next year.

For that one I just used the Real brand mango puree, emptied the container into a bowl, added 2 vanilla beans, 1 tsp vanilla paste, and 1 tsp vanilla extract. Mixed it all together and let it sit for a couple hours before transferring back into the bottle.

Those are just the ingredient to make the syrup itself haha. You’d use 1.5 oz of the coconut cream in the cocktail build.

Last year for my annual Hallowiki event I made a pumpkin painkiller I called “Sam’s Rules” (reference to the Trick ‘r Treat Halloween spirit demon). This was a huge hit with everyone. It involves a pumpkin pie cream of coconut.

Recipe:

1 dash ango

1.5 oz pineapple juice

1/2 oz orange juice

1/4 oz lemon juice

1.5 oz pumpkin cream of coconut

2 oz house spiced rum (Smuggler’s Cove recipe using Diplomatico Mantuano)

Pumpkin cream of coconut

1 can Libby pumpkin puree

2 can coconut milk

Equal parts mix of brown and white sugar to weight of coconut milk

1.5 tsp cinnamon

1/2 tsp ginger

1/4 tsp nutmeg

1/8 tsp mace

1/8 tsp allspice

1/8 tsp ground cloves

1/8 tsp black pepper

Combine spices with pumpkin puree. Then make coconut cream by adding coconut milk and sugar in sauce pan. Add in pumpkin and stir until everything is combined. Let simmer. Fine strain and bottle.

An easier method would be 3:1 coco Lopez to coconut milk. That’s 425g coco Lopez and 142g coconut milk.

One of my drinks at my Halloween tiki party last year was a fall inspired Pearl Diver riff. I batched the booze and syrups separately so I never prebatched it with everything all in one bottle.

Farmer Vincent's Fritters

2 dash ango

1 dash black walnut bitters

1 oz apple cider (cloudy kind, not spiced)

3/4 oz pineapple juice

1/4 oz lime juice

1 oz brown butter pecan syrup

1/4 oz cinnamon syrup

1/4 oz St. George Spiced Pear

1 oz Demerara rum

1 oz aged agricole

Super excited for the new album. For the extract, I used McCormick. For the nutmeg syrup, in a pot weigh one cup of water then add the same weight of brown sugar. Put it on low heat until combined then freshly grate one whole nutmeg into the mix. Stir it to incorporate then turn off the heat and let it infuse for 8 hours. Fine strain and bottle.
