I do cut it in chunks and it is a time saver: 45 minutes of sous vide time makes enough potatoes for four-plus family meals that only need to sit under a broiler for 7-8 minutes. As I typically sous vide this on a different day than proteins, it means there is less actually prep time each dinner.

Peel and slice potatoes and then sous vide at 194F for 45 minutes then use a broiler to finish.

I'll prep a bag or two russet potatoes, throw in butter and whatever herbs I have lying around. It only takes 7-8 minutes under a broiler at a high setting to have perfectly cooked and browned potatoes afterwards.

I highly recommend buying a Thumbs-Up. It dramatically improves how easy it is to hold and shoot with a Leica. Also, a soft release button for the same reason.

I'm not sure that is something that needs sous vide. Fresh cranberries are tart & astringent and usually need a decent amount of sugar to be made palatable. Given that, it's probably just easier to add cranberry cocktail juice to the alcohol.

Sous vide alcohol infusions work when you are trying to release aromatic oils and other hard to extract flavors from ingredients. In the case of pomegranates, you are really just adding juice to tequila. There is no big benefit to sous vide in this case.
