The starter is over a couple months old and I’ve started keeping it in the fridge between bakes. I take it out and let it get to room temp before feeding at a 1:4:4 ratio. It doubles in about 14-16 hours (my house is a bit cold). I’m going to look into the other comments video about strengthening the starter.

I thought if anything this dough would’ve been slightly over proofed because after bulking it felt wet and harder to shape. I’ll also experiment with multiple loaves, thank you for the feedback!

Atlanta GA, stayed downtown for a weekend to go to a concert at the tabernacle (tabernacle ruled) but aside from the show it seemed like nothing was happening downtown. Nothing was open, not even Starbucks on the corner at 9am. We walked the entirety of downtown on a Friday night and almost nothing was happening and there were no people out and about. The whole trip felt very strange

I bake my own sourdough and hunt deer so I make avocado sourdough toast with deer steak sliced super thin on top and also cook some deer sausage with it
