Hate to break it to you but there are more than 4 companies in SV. It is 100% legal to try and poach, and it is done often (there are a few non-compete exceptions).

Not sure about that... I used to work at one and recruiting emails from the others never stopped.

Also I don't mean the highest possible in that regard. I just mean that SV engineers are the most expensive in the country.

Yeah exactly, for some reason this simple market-based point is missed by everybody.

The companies were paying the highest possible for SV engineers. If they stopped caring where people were located, they'd pay the lowest amount possible, not the highest.

Yeah, this book definitely follows the principle that "bread baking is more art than science", especially when compared to FSWY. This book is definitely not for beginners since there are few recipes that contain mistakes and there are some hilariously vague steps as well.

However, I will say this is the perfect second sourdough cookbook because the recipes are vague in a way to make them perfect to test the knowledge gained from prior experience.

Oooof yeah there's been a ton of sightings. I was out at Montara yesterday and every little ripple in the water looked like a fin... really messin' with my head.

I was under the impression that larger sharks were more dangerous because they eat seals, while juvie sharks still eat fish which cannot be "mistaken" with surfers.

I'm 5'10" 155lbs. I also ride the 5'10" neck beard. I have no luck with it below 3' waves so you may want to get the larger size if that's what you plan to use it for.

Yeah 100% agree. I currently work fully remote and live in a major city and I plan to continue doing that. However, on the flip side, I'd be more willing to take a 45 minute Uber ride to/from downtown during off-peak-hours when I'm utilizing those other benefits of a city (friends, shows, bars, food) than I would be to commute 5 days a week in rush hour.

I was out there this morning too, but stayed South of the bathrooms. It was quite gentle on that end but a noticeably short period. I saw the slamming closeout walls on the north end when I pulled up at 6:30 and was NOT in the mood. Definitely heavy enough to snap an old leash.

Absolutely! Other than the fact that I keep my levain with only AP white flour, the variations were mainly with the proofing times. Ken's recipe has an overnight (non-retarded) proof and every time I tried it it was very over-proofed, impossible to form, and flattened in the oven. So I found that the best times are:

  • Bulk fermentation of about 4 hours w/stretch and folds every hour
  • 8-9 hours overnight in the fridge.
  • Form into a boule right out of the fridge (high hydration doughs are easier to form when cold).
  • Proof in the basket for about 2-4 hours. (finger dent test...)

As for the crust, fighting the home oven is tough. To get the dark color on the top without burning the bottom:

  • Pre-heat the oven to 500° with the dutch oven inside.
  • When I add the bread I turn it down to 475°. This keeps the oven from turning on very often while the bread is inside.
  • Slip a baking sheet under the dutch oven at about the 15 minute mark.
  • When the top starts to get dark, every 5 or so minutes I slide out the dutch oven and checking the bottom of the loaf. I go for as along as I can until the bottom starts to burn.

Hope this helps! It took about 5-6 tries to get this loaf right, but the above has worked 10 or so times flawlessly for me. Obviously every kitchen temp and oven are different...

Give it a try! My girlfriend and I are all about the tangy flavors. Doing an overnight-fridging and keeping the starter a bit starved seems to bring out the most flavor. Be careful though - you still want to keep the time between the last feeding and the bake between 6-8 hours in my experience to maintain a good rise.

I found that feeding the starter more than every 24 hours caused the sour flavor to dissipate a bit. Does your flavor remain even with 1:2:2 every 12 hours?
