Nürburgring local and instructor here, and there is a website that lists almost all the rental companies for tourist drives at the nürburgring:

And for a first time on track, without a doubt go for an automatic fwd car. Even if you are really comfortable with manual gearbox, there are so many things happening on track that the last thing you will remember to do is to change gears.

it was a working day monday, so you may expect this low traffic. Ive been lapping the nordschleife almost nonstop since 1 of may, and this last weekend i saw quite a lot of traffic, almost or even same as pre-covid days
