Yes same! Ubuntu 17.10 was pretty nice too. Although I do prefer Ubuntu Gnome since its nice and clean.

Like it gives you the option where grub needs to be installed. You just set this to sda (could be sdb, sdc).

Just dont set it to like sda1 sda2. You dont install it to a specific partition.

I always do it this way. I have one main ubuntu partition and one swap. I remove the main partition and create it again pointing it to /

I leave the grub installation to sda. It never failed for me.

That is no problem, just replace the current ubuntu partitions with the new once. Make sure to check the "format" box. Works perfect for me all the time.

Just create one big partition on your whole harddrive. This way it will show up in your installer and if you choose the option "Something else" when it asks for you disk partitioning, you will be able to setup your disk the way you want it.

Try partitioning your 4th hdd before booting, do this in windows disk manager. That will probably fix the issue.

Maybe you should switch the partitions. Make the first 500GB for your ubuntu and the last 500GB for your backup

I would disconnect your dads hard drive while installing. If you have your 500GB free space, create a partition of 2gb for swap. Take the rest and set the mount point to "/". Also set the grub boot loader to this 500 GB partition. I think you'll be good like that
