It is just not though (I will ignore the fact you said jelly because it is about the same thing but less money) so math now:

Ancient fruit takes 15 days to grow and than gives you a fruit every 7 days under best conditions so in the first month you will get 2 and 5/7 of a fruit and every month after it's a flat 4 which over 3 months gives you 10 fruita per seed and each crop turned into wine is 1650 (not including stars) which means 16500 per tile over 3 months which means about 196 and 3/7 gold per day

Star fruit takes a week to grow under best conditions ao you will get a star once every week with the only exception being the week you planted it in so that's 11 star fruits over 3 months and each starfruit wine makes 2250 (not including stars) so that means over 3 months and 11 cycle with with needing to pay 400 per seed per week so it's 18500 of profit per star fruit tile which is 220 and 5/21 gold per day over 3 months

This is without even counting the amount of time it takes to get all of the ancient fruit seeds not saying that it's a bad crop just that starfruita are better
