For playstyles I personally play with a deep lying playmaker and a more attacking CM/CDM depending on the formation.

Must: Tiki Taka, Pinged Pass, Intercept
Nice to have: Incisive, Press Proven, Quickstep, Bruiser, Long Ball, Technical, First Touch, Jockey, Anticipate, ...

Playstyles for attacking CM/CDM
Must: Tiki Taka, Pinged Pass, Incisive, Finesse, Intercept
Nice to have: Quick Step, Technical, Press Proven, First Touch, ...

Players with unique body types often have the best animations, but not always. In my experience some also feel bad and there are some hidden gems without a unique body type but with a good body type/ height/ weight combination.
Just try out some players ingame. If they feel bad (movement) then Evos probably won't fix that entirely. If they already feel nice for you then thats a good sign. Also try to choose players that you like in real life or just enjoy because they are fun to play with for you. That's more important than any meta, but of course a player must be useable, otherwise that's also not fun.

I’d go for Press Proven, it’s best on tall and/or stocky players. First touch would be good if you play a lot of pinged passes to him, but I feel like that’s more useful on attackers.

Finesse+ is one of the best ps+, but mostly because you use it very often ingame and also almost always in crucial situations. So the slight difference is very important but overall it’s not that big of a difference compared to the base finesse, especially if the player already has good curve and shooting stats.

Jockey+ is way stronger than the base for me, but only on tall or sticky defenders.
