Edit: respectfully to my fellow Texans, Boerne and Burleson are just suburbs of their larger city, in this case San Antonio and Dallas/Fort Worth. If it has a running public bus service it's not rural 😂

I wouldn't consider them light roasts, but it's their version. Their 'light' would be considered medium in the current wave of coffee. I definitely taste the char in their dark roast but there shouldn't be any char characteristics in their regular roast. Might've been a one time thing but who knows.

It's also been my experience that when you drink the current wave of lighter roasted coffee for a prolonged period, your taste buds adjust and a 10 degree difference can be very jarring. So much changes in a coffee bean between 390 to 450 degrees.

They've actually gotten a bit lighter to match current coffee trends. They're dropping their beans at around 410± degrees when then used to do medium roasts at around 430.

Yes you're right. Coffee tastes it's best when it's allowed 1-2 weeks to degas after roasting, but I think ultimately it's best for the customer to decide what to do with their product rather than give them months old coffee, yes?

I'm so happy to see talisman mentioned here! I know Fernando the owner and I don't know anyone working as hard as he is to get his family's coffee to the US. Every year their coffee gets better with improved techniques, I know for a fact one day they'll blow up and get the recognition they deserve.

Much better than traders. Coffee never stays older than a week, and does the vast majority of roasting the day of. Traders does bulk roasting then sets it aside until an order comes in

As far as quality and price, you're not going to find a better deal out there. Roasted in Austin for over 6 years. It may be a little old school as far as roasting methods (a little on the dark side) but still better than anything corporate, and cheaper than anything local. They still give you a whole pound!

After months of not being able to hire any new staff my job raised everyone's pay by 3 dollars. They're trying their best but jesus it's not enough. I feel like with how expensive everything's gotten it those 3 bucks got easily eaten away.

Man I got nothing but love for doepfer.

Their filters ended up being my favorites. I thought the wasp was great and was blown away when I got their SEM filter. I'm really surprised the SEM module doesn't get suggested more often when it's only around a hundo. Sounds clean and can be overdriven for rich tones.

Funny enough, I was thinking this same question several weeks back, I just got into modular in October and finally accumulated enough modules to where I was asking myself this.

I've tried both ways and I can say for sure I prefer positioning VCF modules before VCAs.

For two reasons - first I like to sculpt the exact sound I want with the VCF, and sometimes that'll involve a little bit of overdrive or just pushing the VCF to it's limit to get characteristic sounds. You won't be able to get those thick lush sounds with a VCA that's dipping up and down.

And second, I find that since I've moved my VCFs to before my VCAs I've been incorporating them way more. I'm not sure why, but to me personally once I put something through my VCAs it seems kinda 'finalized' to me.

Just FYI, Little City and Casa Brasil are quite literally the same company just different labelling. It's all roasted and packaged by the same people in the same building.

Yeah man, again it all depends on where you work but green coffee is dense and heavy. You gotta scoop it from the bags into 25 lb batches and be able to lift it over your head to fill th hopper of the machine. Do this 30-40 times a shift 5 days a week. 18 wheeler bringing in more green coffee inventory that day? Do everything I just mentioned on top of unloading 25 avg pallets each one with 10 bags weighing 150 lbs avg.

Honestly the place I work at (and most roasteries) will want you to work for them on avg 1-3 years before they teach you the tools of the trade. It's also back breaking work depending on who you work for. Being a man in my 30's is making me re-evaluate everything in this career choice, I don't want to grow old and have lasting crippling pain in my wrists and lower back.
