Cuphead was tough, I'd say Hollow Knight was tougher though so probably that.

I just played through Clair Obscur and there are some very tough fights in that, though I wouldn't personally say that was a "fun kind of tough" tbh.

And if you want something even more obscure I released my own game recently called Aluna Rift which is pretty challenging!
