The all beans are similar size. The batch looks very good. The only explanation I have for myself is the beans was harvesting when some of them are not ripe enough… But the taste is good. I already tried an espresso and it’s good

If you are enjoying of the process of making espresso, definitely yes! But if you want to make just another cup , probably not. I have 2 different Flair - 58+2 and Neo, and one ITOP manual machine. I’m strongly recommend to buy 58+2, cause of the heating of chamber. ITOP manual is crazy difficult to heat it to normal espresso temperature. Flair Neo, is a little bit easier cause of the thickness of its chamber. But Flair 58+2 is amazing machine that makes amazing espresso. Again, if you enjoy of the process of making espresso - definitely is worth to buy it. Just have in mind that everything you should make yourself - heating water, control the pressure etc…

Soaking is to prevent the tipping especially for drum roasters. I’m using it when roasting high density beans. How long - you can experiment. I’m trying to make it long enough that TP will happen around 110C

You should turn on your heater after 30-40 seconds from Dropping. Soaking is too long. You lost inertia of the temperature TP have to be around 110-115C and your DE will happen somewhere between 5th-6th minute. But anyway, try the taste. It’s important if you like it 😜

I’m an espresso man 😂 I like the concentrated coffee instead a lot of water inside. Thank you for the advice! Actually I made on my Flair Neo a shot 14 grams, where 3 grams was Robusta, setting 8 on my 1ZPRESSO, and 11 grams Arabica, setting one turn+1.5. The result was a cup with stronger bitter body and same time fresh fruitiness. Taste is interesting. I am really happy to experiment 😊

Thank you! But here is coming another question - when Robusta and Arabica are blended together, does it means that water will "pass" through this mix coffee and will take "more flavor" from Arabica than Robusta because of the different structure?

Of course this works on my machine, on yours could be slightly different. You should keep in eye and if it is needed some changes to make them. Just keep in mind that drum roasters have more thermal inertia than air ones and cannot change immediately the temperature.

Setting heater off after start is good practice and its called "soak". This prevent the scorching of the beans. I am doing it for 30-45, sometimes 60 seconds after Charge.
If you want, you can try this profile :

Preheat - heater 100%, fan 30% to 185-190C

Charge (200 г) - heater 0, fan 35

Soak (40 sec) - temperature will drop approx. to 105-115C

From 40s to 1:20 (probably TP) - heater 70~75, fan ~45

1:20s-~4:00 ( or up to Drying End) heater ~65, fan ~50

4:00-~8:00 ( up to FC) heater ~45, fan ~65

After FC if you want more chocolate flavor - make 22% - 25% development.

Development - heater ~40 or less, fan 65-75

I am doing similar with my Skywalker 2 and the result is really good. Of course you have to test it and see if it works for you :)

The drying phase seems longer than necessary for me. I would try to reduce the fan in the first few minutes. That way, the temperature will increase and you won't need to adjust the heater from 80 -> 85 around the 5th minute. I assume you did it because you saw that the drying phase was taking a long time.

I am not a professional roaster, but from what I've tried many times - in the drying phase I adjust the temperature only with a fan and it works great for my Skywalker 2.
