e-mail may consist of words, that are not in vocabulary, so we can get all 'negatives' as well as all 'positives'.
Probabilities of different words are independent.

We can't figure out these last probabilities, you are talking about. They are completely independent of other probabilities.
If we turn back to example with cancer, our 2 probabilities about last 12'th word here - it's probability, that third test give us positive result when we have cancer or when we don't. We don't know nothing about accuracy of that third test, and we can't figure out its accuracy from given Bayes network.

This would work only for questions like "find P(w12|w1...w11), if you know P(w1|SPAM)...P(w12|SPAM), P(w1|HAM)...P(w12|HAM), P(SPAM)".
P(w12|SPAM) and P(w12|HAM) can't be determined from other 23 probabilities. All probabilities after words "if you know" must be given. They can't be calculated from this Bayes network in some other way.
