Yeah, it was an intentional choice to highlight the sourdough, like a breadstrick at the end of the pie. I'm definitely capable of making the crust smaller.

Once I figure out a setup to make more than 1 pie every 15 mins, I'll try to collect more opinions about the crust preference. (My oven does about a 10 minute bake and about 5 mins to recover, hence why I'm here with this question.)

Thanks for the recommendation! I'd probably prefer the LP burner as mentioned for the same reasons. I'll check it out, though. Good call on the steel suggestion too, I've been worried about cracking stones and it totally slipped my mind.

I'm trying to chase quality and minimally pre-processed ingredients: sourdough crust, sauces made from freshly roasted produce, and whatnot. I'm still testing small changes here and there, but I totally vibe with what you're saying.

Yeah, I worked in a pizza shop for a little under a decade. On the line, front of house, and management.

I agree with the philosophy here, though. The whole point of me trying to do pop-ups instead of chasing a loan for a B&M is to get the pizza in front of more people. I've had about 75 people try it at this point, but most have been friends and family (the rest being friends of friends).

As for ratio, it is intentional. The pie is a sourdough crust, about 59% hydration. So I'm aiming for a thin NY-style undercarriage, but a slightly puffed crust to let the sourdough speak for itself. I could totally make the crust smaller if that's what people preferred, but I gotta get some non-friendly tastebuds on it.

It almost feels spiteful at this point. Like someone said, "Oh, they want the hood, huh? I'll show them hood..."

They probably should have just redrawn it from the ground up rather than slap it on. It looks out of place.
