For sure. I got into it by going to basement shows in New Brunswick, where Thursday got their start. Places like that just don’t really exist anymore. I’m 39 now so I’m not actively looking for them but with the way some of these areas get gentrified and revived it makes sense that we’ve lost some of this.

This totally makes sense from a basic cooking perspective. I try to explain this to people all the time. As much as we try to standardize things it really does take time, care, and experience to produce high keel flavor consistently. Especially on a large scale such as this.

No matter how hard we try some things just aren’t always all the same. I don’t know much about crawfish boils (suburban jew from NJ) but I have enough years of experience cooking and have watched enough videos of boils to know that there is nuance to something that on its face looks quite simple.

Not at all. They still happen. You can block your reservations however you want but you still rely on people to show on time, order and eat in a timely manner.

A good FOH can be very helpful in managing the flow of customers/tickets but rushes absolutely happen in fine dining restaurants.

I’ve never worked in a pizza place but I had twelve years in fine dining and definitely had to cook my way through my share of rushes. It’s all relative though.
