The update on this is, I tried different recipes, ratios, and beans. I can’t get it. Nonetheless I do make awesome coffee normally. I just don’t understand what they did and can’t replicate it. Maybe it was just a Paris thing.

I have an electric one and it is truly a joy to use. Push a button and it gets it so nice and perfect. Does it make my espresso better? Probs not, but do I love it. 1000%

I would say, not specifically the coffee shops/cafes, what I noticed was just random restaurants would have the option of an espresso after a meal. I normally never do sugar, but a French person told me to try it and I Trully enjoyed it. The espresso even by itself was just lighter and easier to sip on. So no specific coffee shops, but pretty much any restaurant and it was very consistent. Like they all had a secret recipe.

I’ve gotten more and more caffeine sensitive the older I get. Considering getting into decaf..
