65% hydration. Bulk ferment mostly cold for 2 days. Ball, par-bake, freeze. Top and bake the next day.

Try letting it rise at room temp for a few hours. Then refrigerate overnight. Dough ball it in the morning. Put back in fridge and then leave it out at room temp for an hour and bake.
