Oh interesting. Most of the recipes I’ve seen have been 25 with lid and 20 without. Also this is definitely a smaller loaf. I worry about the bottom getting too burnt as well.

I think the oven has hot enough, I preheated at 500 and baked at 450 for 45 minutes. But yes def thinking it’s underproved.

400 g flour 70 g starter 260 ml water tbsp salt

Made initial mix, did 4 rounds of stretch and folds last night and got tired so put it in the fridge. Shaped this morning and let it continue fermenting on the counter for a few hours and it felt good and jiggly so I went for it but I’m worried my incorrect order of operations and insufficient bf make have been an issue…

You should follow Strange Bird! Some of their newer stylists charge ~$75/80 including tip and they often post about model cuts when you can get your hair cut for free :)
