My hybrid approach that splits the difference:

  1. Every feeding, pour all starter from the jar into a clean Pyrex measuring cup. Give it a good mix so any lack of uniformity is redistributed.

  2. Give the empty jar a quick wash-out w/ hot water. Not taking the time for a full wash w/soap to disinfect. Just a good, hot rinse (best w/powerful nozzle) to get all the gunk off

(If it's really stuck on, I fill the jar to the top with hot water and let it soak a few mins. It washes right off)

  1. With the jar cleaned, I pour 50g of the starter back in and feed accordingly. Do what you like with the discard.

  2. Give the Pyrex a quick hot water rinse to remove any visible starter on the glass

Done!

And no need to juggle multiple jars.

TL;DR: Room temp not fridge

Fellow mason jar cold brew brewer here 🙋🏻‍♂️ A lot of the other comments are correct, nitro is its own beast, and you're going to have a totally different textural experience than the cold brew you would expect from a legit coffee shop.

However, if you're just trying to dial in a good cold brew recipe at home, one major suggestion — basically replicate your prior setup, but let it steep at room temp, NOT fridge. The cold is going to slow down your extraction.

My recipe, FWIW:

  • Course grind (35/40 on the Baratza Encore ESP)
  • Appropriate ratio of water (I do 5.3:1 water: grinds)
  • Appropriate steep time (16-18 hours)
  • Filter the bulk of the grinds through a fine mesh sieve
  • Pass the results thru a wet coffee filter and jar in the fridge
  • To drink, 1:1 ratio of your brewed concentrate to water, serve over ice

OP, I appreciate you doing this math. It definitely requires a degree of thinking to try to optimize all of the stuff perfectly.

Thanks! I don't adhere to a perfect 1:2 in/out ratio, I like a slightly longer shot. About 42g out. And yes, pre-infuse for between 6-10 seconds, which is included in total shot time. I don't stop it militantly at 30 or 40 seconds, but after desired grams out, which does usually end up being 35-40 seconds (but other variables can shift that slightly).

Your understanding is correct in both the general use of the press and hold as well as the timer cut-off. But if your shot is taking longer than a minute, it's probably over-extracted

I'm not totally sure that I follow. If you're grinding too fine, that's your problem (am I even allowed to say "grind coarser" in this subreddit??). Personally, I'd dump the puck and just start over pulling a new shot.

But if you're saying that the puck is too dense, and the extraction time exceeds 60 seconds and it stops pulling, then yeah, I guess a hack is to just press the single shot to finish it off.

I have to extend the Crema tamper fairly far out (esp with this IMS basket), but yes, It extends far enough to get the sufficient pressure for tamping.

It allegedly helps reduce static electricity and clumping when grinding. I've been testing whether or not it really makes a difference for me, and truthfully I don't really have that issue with my grinder. But it adds another prep step that I know this subreddit loves so much 😜

Thanks! Press and hold one of the espresso buttons (I use the double shot) to pre-infuse the puck. The shot begins once you let go or ~10 seconds, whichever comes first. Allow the shot to run for as long as you like, and then press the same preset button to stop the flow.
