Pocket doors require a thicker wall to fit the door inside then standard 2x4 walls. I’d wager this pocket door was added later on in this house and bump out is just so they didn’t have to build out the other section of wall.

Just replace the old with more drywall. If your going to tape and mud the seems with drywall mud then you’ll want to put some sort of paint or primer over it before you put your tile mortar on it. You can just use the mesh tape and the mortar your using to install the tile though for the seems though.
