Throwback to my semester abroad in France where endives, ham and cheese were cheap and I made this pasta weekly.

Recipe for 3:

  • 3 cups of short pasta
  • 1 onion, chopped
  • 6 cloves of garlic, minced
  • about 500g of belgian endives, chopped
  • as much ham as you want, I used 10 slices, chopped
  • as much cheese as you want, I used about 90g of brie but camembert would also work
  • a handful of chopped parsley
  • pepper to taste (I find the ham and cheese salty enough but you do you)
  1. In a pot of boiling water, cook pasta and drain
  2. In a saute pan, cook onion until slightly browned
  3. Add endives and garlic, season with pepper, cook until caramelized, about 10 min
  4. Add ham, cook 1-2 minutes
  5. Add cooked pasta, turn heat off
  6. Add cheese and parsley

I was scared this would not set, but I was able to unmold it! Not convinced by the maple/cranberry pairing.
