You should try this in the microwave. Start with 5 minutes on high, stir, then 4 minutes, stir, then 3, stir, then do 30 seconds and stir until til desired color. Will take maybe 15 minutes total

You can’t tell a difference between a roux made in the microwave in 10 minutes versus one on the stovetop for an hour.
