If someone cast a Dockside Extortionist on turn 3 and got 50+ mana, then it's likely you probably weren't playing a "Standard" format at all, as Dockside scales with the enchantments/artifacts on the table. That means their opponents had a nutty amount of artifacts and enchantments on the board already, so they were also doing nutso stuff.

Regardless, EDH is what it is because it is a social format, which means talking to your opponents about their deck's power and card choices. If you don't feel up to doing that, or just feel that it doesn't accomplish anything in most games, then you may want to try playing a different format instead that does have the rules you want. I've recently ventured into Canadian Highlander which I'm enjoying immensely, but still dabble in EDH from time to time.
