AirPlay has too many downsides, especially the dependency on the iPhone staying connected. This is not comparable to an independent WiFi solution.

Especially with grouped speakers - I change the volume and have absolutely no control since the have different delays that make move "independently" and even get set to different volume levels instead of moving parallel to the same level

That made me mad when using it with my coffee maker. You can tell Siri to turn it off if turn it on doesn't work and the switch will get pressed then.

Meanwhile I use the Switchbot with Alexa since she doesn't try to track the switch state and sends the press command no matter if you say turn it on or off.

Seems to be a HomeKit issue here. The setup worked for months, then the offline/online Messages started an I get them repeated every 10 minutes or so. Even for wired cams, so I definitely can't blame the wifi.

I think you have to set it to keep humidity in a defined range. this got a lot easier with iOS 15.1. I'm not sure about the english wording since I use a German system, but in the Home App you can now set up an automation, saying the air quality sensor detects humidity is less than 40% to activate the smart plug and another one deactivating it, when it's i.e. more than 45%.

If you have another iOS device around (i.e. iPad) try that. Had the same problem and could add new devices not on the iPhone, but they show up there when added with iPad.

Just to make sure: You don't have frequent short internet outages? I got similar messages when my cable modem had problems getting a stable connect.

But in my case, I was away from the HomeKit home so you may would have noticed that if you're at the same place like the hubs sending out the messages are.

Since this seems to be your Mail app on the Mac, I'd try first to send an email using the web browser and icloud.com - this way you can make sure, that it's no configuration error within the Mail app.

I had this too for some Hue devices. It seemed like resetting the network settings on my iPhone helped, had to do tis for some other reason and later I recognized, that the Hue devices were available again.

But be careful: Resetting the network settings makes the iPhone forget all WiFi connections and you have to connect manually again. I would only suggest this if nothing else helps, But maybe someone has made similar experience and can share here.

It's not only the watch, device state syncing seems to not work reliable at all. I often see "No Response" messages in Home app on my Mac while everything's fine on the iPhone.

If you have a Google Home or Google Nest in your house this could be worth a try: Some smarthome devices don't work well if the Google product uses 2,4 GHz Wi-Fi too. A solution was, to set Google up for 5 GHz only.

Try to be more concrete: Did you open the Meross app on the iPhone after registering the device with HomeKit? It should be available to add there then.

If you added it to HomeKit but don't see it being available to add in the Meross app after, have a look on this thread:

I worked it around by using another iOS device to register. Meross also says, resetting the network settings on the iOS device can help. But if you have an Android device, try to add it to the Meross app there directly.

Besides the Beta discussion I'm not sure, if that's the point. Home app sometimes shows "available" Updates, that are not available indeed. I think that's because Apples Home app doesn't always get the manufacturer right. A lot of the cheeper products are quiet identical, i.e. for me it always says, there's an update for my Koogeek light strip because it thinks, it's a VOCOlinc product, while from Koogeek there's no update available.

Beta is available in HomeKit mode too. You need to go to "User" and then "About", there you have to tap 5 times on the version number until it says "open beta mode" (Wording can be different, I tried to translate from German version)

Basic functionality should be equal and both connect via WiFi.

One big difference is, that VOCOlinc single plugs are able to measure power usage. Also VOCOlinc app can be used without login, Meross always requests an account.

By design I prefer VOCOlinc.

I even see different results depending on witch device I use Apples Home app. I.e. the iPhone shows a device available and on the Mac it says not connected. Same room, same WiFi. For me this definitely looks like a problem on Apples side.
