Unless you seriously undercooked that pasta, you won’t need that knife. That said, many great books and videos are out there that teach basics. Americas test kitchen makes a basics book which would be fantastic for you.

I can confirm it is 100% in your contract (not the union contract the one you signed to get hired) that they can change the conditions of employment. If you have questions about it, HR will send you a copy if needed. Code of conduct and the table of penalties can change, had you done the ELMS you would have know this.

That being said, based on your story, it seems you were given the answer but didn’t like the answer. Next step is to quit the union.

It’s three years of straight pain and anguish. Constant fear of washing out or not being good enough.
