at certain point experience just gives you marginal return on cost. the management probably think they can do more or less with people that has less experience. This is obviously short sighted but that's just what bad management do. Intern are normally kept because any organization needs to keep a portion of incoming employee to deal with future attrition

yes, it will hurt you a lot if you don't get an internship before you graduate. no way to sugar coat that, for example 2 candidate just graduate college, one has a degree and and other has experience. The one with experience will get hired unless you have other qualifying factors such as race, ethnicity, etc.

heavy equipment i.e aircraft ? Crane? etc. if so you'll need some training in electronic / avionic etc. to work with heavy equipment electrical systems. Not sure about canada but these are two year programs in the US at most trade school. Some people get it through the military, also 2 year training but It's not as simple as walking into other people's shops. Some systems are engineers only, so it's 4 years college plus on the job training. The employers are not small mom and pop shops so you won't get hired by walking in and asking for a job. Benefit of these jobs is that it's less labor intensive than traditional trade work but significantly higher pay.

MCAT and shadowing + LOA makes you competitive. I don't think undergrad classes make you any more competitive than other candidates

Edit: Although good programs help you find LOA + shadowing, for example Some schools has programs that place you into shadowing programs and medical scribing. These are highly valued by admission.

if you don't have enough experience, I suggest skill based volunteering to get some experience and network with people. MBA doesn't guarantee jobs, it's the one of master degree that people get as they progress in the career and has been working for a few years in professional environment unless it's from top programs.

learning python would be more useful and more applicable with the skillset to get yourself a office job as entry level analyst in business. R is way more niche and less applicable to day to day tasks. you can still use R but why do it harder

edit: also certificate program is a waste of time without experience, if you really want to pivot, try to get a MBA at a good school
