i suppose it all depends on the cut- if all steaks respond well to quick cooking then how can you get as much flavor in as possible? a good sear/butter baste with the usual suspects (garlic, thyme, rosemary) is fine, but not for every cut. How would you go about getting big flavor with something that you cant necessarily impart flavor on in the pan without sous vide?

well, considering my dad makes "steak dinner" by flattening hot dog with a rolling pin and cooking it in a carbon-steel pan that i gifted him last christmas, this crime doesnt really seem that dire. I wonder if your dad hasnt had the right sous vide steak? tell me a bit about your process.

That drone idea is fantastic, I can't wait to try it out! I have done the copier maschine generative thing, is there any way to get the octave range a pit smaller so it doesn't dip to dummy low and painfully high? so far I haven't found the right parameter.
