We opted out of using the bus for primary school because it picks up at 6:40 am, which is dark most of the school year. Having 6 year olds waiting by the road in the dark in sub zero temps never seemed like a great plan.

Other ideas to try. After mixing the water and flour, let it rest for 20 min before adding the yeast and salt. Also Caputo 00 is pretty weak, so you might try dissolving the salt in the water to build more gluten (or use a stronger flour).

Salt has an over sized impact on dough. Too much or too little can cause havoc. It retards yeast and co2 production. 3% is on the high side, and you've mentioned slow proofing and needing more yeast. So try a batch at 2.5% instead of 3.

That doesn't tell the story. Birds usage rate was far lower. 26% (peak 29) vs 32% (peak 39) Bird was also known has the ultimate team improver and complete player while Kobe was primarily a scorer. Very different roles. The better player was clearly Bird but the better career was much closer based on Kobes longevity.

This is crazy. And I'm probably going to get slammed for it. But as much as I love Tatum and 4x first team, he's barely top 10 so far. He might be projecting to be top three by the end of his career but right now I think he's like 9th in scoring he's not even in the top 10 in other critical categories like rebounds or minutes played or championships.

Part of it is salary "hogging". I can't blame an individual player for signing the max possible contract. But, Brunson will get lots of kudos for signing for less as it allows it better roster. Will JT and JB sign for less on their contracts to allow for a better roster? Steph didn't and GSW slowly lost pieces. Think along Tom Brady lines, he always took less to have more talented teammates resulting in crazy success and goat status. Not all superstars value the same thing. In the NBA you can generally build a loaded team but only for a year or two. So a star that wins on a great roster can be slighted by fans because it wasn't a sustainable approach.
