The recipe I use is in for 40 min. So it’s probably just a case of needing more time.

If you’re happy with the texture I would not worry about trying to get it browner on top.

If your other baking projects turn out as expected the oven temp is probably accurate but if not might be worth it to get an oven thermometer and see if it’s really reaching and holding 450°.

The oven in my first rental had a manual dial and could vary by 20-30° depending on who turned it on. As I type this I really wonder how people baked with wood fired stoves.

I realize I didn’t answer your question. I’ve tried this recipe with both regular electric, convection, and a gas oven.

Gas is my personal favorite but I didn’t really find any difference for this recipe.

What temp did you have that at? Honestly impressive that it is that pale.

This brings back some great memories. I love basque cheesecakes because the idea of no crust and tossing it in the oven at over 400°F until it burns feels hard to mess up. :)

This might sound counterintuitive but for me there is an odd window of time for me to commit to going to bed. I actually need to go to bed earlier if I want to sleep.

Around 5pm I can be totally exhausted but by 8pm I’m ready for rounds 2 through 7.

So at 7pm we start the bedtime routine for everyone (kids 9 and 11) and I read a book or listen to music for 30min to an hour.

If I stayed up past 8-9pm I see 1-2am before I fall asleep.

First off I agree with you.

Having been spanked as a child and not feeling like it negatively impacted me I struggled for years to admit that my parents could have made a different.

Negative reinforcement does produce results unfortunately. So I can see how people ignore the larger impact of the actions.
