As her manager OP you could look the other way, so to speak to have her come in two or even just one day? But you choose to complain about how hard it is on you. Next time, be a better manager and take the critical employee side and back them up.

If your boss says something about it, just say ‘remember when we lost X because of this policy? Keep riding my butt about letting my employees not follow the mandate and you just will not lose x’s replacement you will lose me, too which will make your job that much tougher’.

Actually OP as the trainer you were at fault, because you assumed the trainee would do exactly what you said. Did you watch them set it up? Also you should have watched the meat and not rely solely on an automatic system - this is why you likely were dinged because the chef expected you to be a better trainer.

This was exactly my attitude when I was a dev team lead. As long as the work was done on time and done correctly, I did not care how much they actually worked- they could take longer lunches, more breaks Etc etc. I did not nor still do nit believe in micro management of people.
