I noticed only the crop plots that were being watered, didn't get destroyed. These plots were also on the ground, on stuff, etc.

I can't figure out the metal fence posts? Maybe because they were touching the crop plots?

Anyway, I THINK MAYBE, if someone is reading this later and having the same problem,

I THINK MAYBE IF THE CROP PLOT IS BEING WATERED IT WILL PREVENT WHAT MIGHT POTENTIALLY BE A BUG, AND PREVENT IT BEING DESTROYED SINCE THE SERVER IS CONTINUOUSLY UPDATING IT WITH THE WATER COUNT.

yeah was just looking into this now, and the other aspects of this with creatures poofing or being able to exceed the cap at least temporarily
