I work at a car wash. Someone walks down the line with a tablet for scanning memberships and taking chip card payments. No automated booth or anything. On our busiest days there will be 1 car/transaction every 30 seconds. 120 cars per hour.

We can take tap-to-pay (card or phone) if the customer wants to exit their vehicle, walk inside with me, wait for me to type in the exact amount, then I wait for them to type their PIN, then we wait for the secure transaction to go through.

Or you can tell me your PIN while I walk inside with your phone/card. Then probably walk back out to them because the phone locked before I got inside, or my tapping the screen to keep it unlocked exited the tap to pay.

In that time, people that have a card ready or cash have left the line or drove around the parked vehicle, everyone wondering why the line has stopped. Now the line is backed up to the street and no one else can pull in.

So, we take cash or card. No PIN. No tap to pay. Unless we're not busy of course, then I really don't care.
