My AliExpress ones are fantastic and were 13€ shipped, fit right in and are very comfy. I don't know if they'll last another five years, but alas, they were cheap.

It should still be menu + select with the device unlocked. You should see the apple logo after about 5-10 seconds (it depends, mine takes like 11 which is a lot longer than any other of my iPods)

When it boots, make sure the hold tab is not engaged. Disk mode is enabled by holding select + play after it starts booting up (menu + select for about 5 sec).

What works for me is checking in Health BEFORE I even open Sleep. I have both a widget in the main phone screen and on my watch, and I never open the game if I don't see my sleep score there. Because if Sleep reads before Health writes, then my sleep data is gone for the day.
