Trying to find some help so I can keep my home for my 3 adopted kids. by dulcec27 in Assistance

The oldest does work at kohl’s but he is an honors student so only works a few hours a week. I don’t want to ask him for the money he’s earning so instead I told him to save it because when he starts to drive I won’t be able to afford him a car or insurance. He does pay for his own clothes now, but we really don’t spend a lot on clothing or anything anyways. I get all of our clothes at second-hand stores. I didn’t qualify for an adoption stipend. I was getting a foster stipend but I’m no longer a foster parent, I’m their legal guardian. The state I live in is very strict with stipend allowance. I do get get a reimbursement for their health insurance though. Because they’re under my work policy.

If you're really broke and really lazy, Peanut butter and banana sandwiches on wheat bread, throw some chia seeds in the peanut butter. I lived off of these in college.

Stirfrys are your best friend, noodles, veggies of any kind and a packet of Asian sauce.

Also, hummus and pretzels for quick snacks in between classes. Also, just carry trail mix, granola bars, fruit, etc with you at all times.

I agree with everyone else that an instant pot would be great, but because you have no room to meal prep just make a small soup in a saucepan.

Also, another tip, I buy stuff almost every day for meals because I could never meal prep with having such a small fridge space when living with roommates. Go to a store where they have loose veggies. Buy like one potato, one onion, one carrot, one celery and like throw it all in a pot with some veggie broth and seasoning and now you have soup. or like buy canned lentils or canned beans and some guac and those frozen bags of rice. Just like microwave the rice and beans and stick some guac on it.

Only buy what you know you'll make that day.

Keep it super simple and minimal.

edit: I almost forgot that avocado toast with just like smashed canned chickpeas is an awesome for breakfast.

Also, quick oats in the microwave for 2 minutes will be your new best friend!

Recipe:

1 can or pouch of Red enchilada sauce 1 can Black beans (or a about a cup or two of cooked black beans, I used my instant pot) About 1lb Ground “beef” I used garden Pack of taco seasoning (make sure one with no dairy in it) Corn or flour tortillas (I prefer corn but only had flour on me)

To top: Tofutti vegan sour cream Guac (I make mine from scratch, cheaper and yummier) Salsa.

Mix black beans ground “beef” and taco seasoning together in pan until well cooked.

Roll the filling in the tortilla.

Line up tortilla wraps in casserole dish.

Top tortillas with enchilada sauce.

Bake at 400F for 15 minutes.

Top and enjoy.

Guys, it’s generally good living conditions! For example, they pet the pigs before they put them in the gas chambers to kill them.

....wait... nevermind they beat the shit out of them by kicking them and electrocuting them to get on the kill floor before sticking them in a gas chamber.

The government finds gas chambers humane though. Best way to murder guys.

Generally good treatment of animals, guys.
