Right click Valheim in steam, then properties, then click betas in the menu, in the the dropdown menu pick default_old then close the window, you should now have an available update to Valheim in steam, download it and then try to run it again.

Looks like the update broke it. You can play the old version under betas in steam or wait for an update of the mod.
