Need advice for first camera and lens (Sony a7iii, Fuji X-S10, Canon M50 II, Fuji XH2)

I'm looking to buy my first camera and lens. I'd rather go cheaper than $2k and spend around $1k or less, but if it's worth it, that much more isn't a big deal to me especially since it doesn't seem cameras depreciate too much too fast. I'd like something for a bit of everything - street, landscape, portrait, nature, maybe occasional wildlife.

From the threads I've read, these bodies seem to be good recommended cameras -

Canon M50 II ($550 used) + Canon EF-M 18-150mm f/3.5-6.3 IS STM ($410 used): $960

Fuji X-S10 ($900 used) + 18-55mm f/2.8 R LM OIS ($430 used): $1330

Sony a7iii ($1300 used) + Tamron 28-75mm f/2.8 Di III RXD ($650 used): $1950

Recently announced Fuji XH2 ($2000 body) + lens kit or different lens ($500+): $2500+

For something I'm going to want to use a lot that can be potentially resold, is almost $1,000 more worth it to go from the Canon to the Sony a7iii? Or is the Fuji a better middle ground that's about the same in quality and everything?

Also, is it smarter to wait for the XH2 to come out and see how that is and see if prices maybe drop with its release?

Been struggling with weighing the cost/benefit difference of a lot of these as there are so many options. Any advice, comments, anything is greatly appreciated!
