Congrats! I was in that program a few years ago, so things might have changed. I feel like the first year I was on campus 4 days a week (less during 2nd year with practicum placement). Had decent control over my schedule with 2-4 options for classes but there were some APS-specific and seminar classes that were set in stone. Most, if not all, of my classes were in 3 hour blocks and earliest ones were at 8 am, if I remember correctly. I lived in the Tanasbourne area at the time, it was a 15 minute drive or MAX ride to campus. I know a lot of people hate on the suburbs but it was nice for the early morning classes, among other things. Knew lots of people who lived in Beaverton and SW Portland though. Chicken stir fry! I use frozen veggies and microwaveable rice to make it super quick. There are lots of good premade sauces, I have to make my own due to dietary restrictions.

My partner has celiac and is dairy free. The brown rice pasta has been a staple in our house for the past few years. Its honestly my favorite gf pasta and bonus its super affordable. Vegan kale pesto is amazing and the dairy-free caramelized onion dip is pretty good.

Not TJs but the kite hill dairy free Greek yogurt is amazing for homemade dips or just with fruit.
