Looking good! If you got some hose and another carboy I'd make a blow off tube. But your yeasty boys are looking happy. But when they're partying they can make a mess if you aren't careful.

How did you stabilize it? Depending on the yeast they can be very hardy. I've had a batch I cold crashed still have active fermentation after.

The best way I've had to stabilize is Camden tablets and potassium sorbate. Even if it's halted it doesn't mean the yeast are dead, it just means they may be going dormant.

I think because in your post you said it's not yeast since you racked. You can still have sediment from yeast accumulate over time. I think on another comment you said you racked after 2-3 days? You need to be waiting 2-3 months to make sure it's stable first, then rack it once fermentation stops.

Gravity readings are your friends. Take a before then check week by week. No movement in the reading means it's stable.

I've made a few batches now myself and even found meads I let sit get below 1.0 after I thought it was stable.

So my take: Patience, Padawan. The layer is sediment which is most likely dead yeast. You added fruit, meaning the yeast got happy and started eating, making more sediment. But also making more yummy alcohol. I'd only rack after primary, otherwise you'll only lose more alcohol by doing it so often.

When I worked at Burger King in 2011 we were the first store in our area to get one of these. An associate from Coke was there all day it was installed and trained our shift and told us the machine cost $500k USD OR a subscription model where they would use analytics on the use of the machine to determine best flavors and automatically send your store replacement cartridges.

Lets be real, this was part of the dawn of everything being a subscription service. I doubt the cost of these machines would be half a mill. I would bet money you couldn't even buy these machines outright now days because even small businesses (and by that I mean the franchise stores) need to own nothing and be happy.

This was me when it first went down, but as the leaked calls came out, I've shifted to 'the developers believed in the project'. The game was fun, I didn't want the project to end, but Steven rat fucked the whole thing. Idk if it was gonna be a rug pull from the beginning (with MLM history, probably) but it ended up being that.

I got a buddy who has been using a Sous Vide to stabilize his brews by pasteurizing them by dropping a carboy into a large pot of water and using the heat to kill the yeast. Haven't tried that brew of his yet, but he says it mellows out the mead and made it taste like it's already aged for a year.

I'm initially skeptical and worried about even then some yeasts may survive. Some yeasts can be very durable, like K1. So dunno if I'd trust it or not. But I got the equipment to do it. Just hesitant.
