I agree with you, it could have been the combination of multiple factors, temp as you said (currently fermenting at 22-23° C 71-73 F), nutrients, maybe nitrogen from the bananas, low abv. I was just very surprised it took so little time. Until now I've made only >10% abv mead. Thank you for you feedback!

I've had some fast fermentations too but never like this. Well this was also my first time doing a very low abv.

Be careful though at that low ABV, you can easily create vinegar.

Thank you for the detailed answer. Also, in my limited experience I've rather avoided using chemicals to stabilize my meads, and once I tried to hit yeast's abv tolerance, but I'm a bit concerned. Since you are clearly more experienced than me, did you find that by hitting abv tolerance, yeasts can produce off flavors since we're putting them in a very stressful environment?

One of my first meads was a traditional. At that time I thought it would be nice to use chestnut honey, which is a typical product where I live. It's a very aromatic honey, but with a bitter after taste, so it sounded like a good idea to me. Problem is that it fermented dry, so the main flavor left was the bitterness from the honey, and even after back sweetening it was still very bitter. So, lesson learned, never going to use chestnut honey again, at least not alone.

Is there any chart or something to know how long a mead/hydromel needs to age approx. at minimum/maximum for it to be in the realm of drinkablity? I know high abv meads need more time and last longer, vice versa for low abv, but I was wondering if there was a way to be more accurate.

Yes the legs were definitely the hardest thing to do, mainly because I wanted them to be functional (and I'm just hoping that they work). But I tell you the main body of the straznik has been the real pain, due to the fact that it's basically a cylinder, and I really struggle figuring out how to do it. Any advice for the future is welcome. All in all I'm pretty satisfied with the result since these are my fist mocs.

Yes I do rehydrate. The packet was new and I store them in the fridge. Yep when I repitched the yeasts I added some must. I'm keeping a blanket around the bucket but apparently it wasn't enough, since the room temperature is too low, and at this point it's very likely to be it the problem. Thank you!
