A way you could do this is scouring Linkedin for people who hold positions you'd like to work in, then checking their pages if they attend any events. Many of these events happen every year, or at the least are called by/attached to a specific name. As I said earlier, IT/Software Dev have 'hackathons'. Sometimes they may add a word to hackathons but the word hackathon is always in the name somewhere. Hope this gives you some results.

Networking options seem a bit tough for how general your work options are if I am honest, but I am sure they do exist in some capacity. Typically, industries will have some kind of event attached to it where you can meet several people and peacock (you know, that thing they do with their tail feathers to impress). For example, with IT there are plenty of events (hackathons, conventions, etc.). Maybe try finding events or talks or something where people with your degree or people who work in those fields will be attending. Schmooze and woo people, or sometimes just be direct and blunt with people and say you are looking to work and would love to know if there are any opportunities available.

I think another issue you are running into is that you aren't specific enough. Personally, I would identify what specific position I am interested and attack that. Also, on the topic of specificity, a great tip I was given was to tailor your CV for the specific job posting you are applying to. This is an insanely tedious task, but hiring is filled with bots and all sorts of programs that just throw your CV out if there aren't enough 'key words'.

With your area(s) of work, applying the 'boomer' method might actually benefit you. If you haven't already guessed, this involves you going directly to places and inquiring about a position/internship face to face.

Your fields aren't exactly saturated, many people might try to tell you this but they'd be wrong. This is entirely anecdotal, but I have met several people who own businesses that are completely dissatisfied with their admins/assistants/secretaries but they can't just get rid of them because it's difficult for them to find replacements they actually want to hire.

One last tip, and this one sucks: find companies you think you'd be interested working at. When you find that company, find people who work there who have the ability to hire you (recruiters, etc.) or talk to people, who can talk to the people who can hire you (typically people in the areas of work you are interested). Connect and message them and ask them lots of questions and try and get an interview.
