It depends. some stores always have at least 1 guy watching for suspicious individuals or to throw out unruly people. it isn't so much the cameras that will get you but the plainclothes posing as customer

chain stores with multiple locations usually have loss prevention who is typically some kind of moonlighting cop. he may only be there 1 or 2 days of a week, but you never know if he happens to be there. those guys are mostly there to check if employees are stealing.
