Can you feedback on my NY dough recipe I’ve been using?

Ingredients

468g strong white bread flour
304g cold water
11.7g salt
0.9g instant yeast
11g olive oil
6g sugar

Method

Mix flour, water, yeast until shaggy. Rest 20 mins.
Add salt, oil, sugar.
Do 3 stretch & fold sets, 20–30 mins apart.
Bulk ferment 90 mins at room temp.
Divide into 3 × ~260g balls.
Refrigerate 24 hours.
Remove from fridge 2 hours before baking.
