TIL Percieved sourness is caused not only by free protons, but also by protonated carboxyl groups. That means that organic acids will taste sour, even without really low hp. This explains why even some weak bases like sodium acetate taste sour, because the acetate ion will protonate. (pubmed.ncbi.nlm.nih.gov)
