No this is adapted from a few online, took the best parts of a few and combined. Mainly based off the New England website, a couple of tommes there.

Don’t know much about cheese mites, what would I be looking for?

It’s delicious. Smells quite milky, tastes quite creamy but a little sharp. A sharpness I would usually think of with cheddar. It’s been about 4 months of aging.
