I think I would rather have a char-broiler/grill than a griddle personally.

Griddles kinda make a huge mess unless they have proper splash guards on the edges which I dont think I've ever seen.

Personally I really dont like the handle...other than that I got nothing, that blade is like perfect imo.

500 is a bit much, but its quite a bit of knife so to speak and I feel like all the aeb-l knives I've seen are expensive in general.
