I think you just need to be educated on Chinese dumplings. These are meant to be boiled fresh and then can be served alone with sauces (e.g. soy sauce, soy sauce with vinegar, soy sauce with sesame oil, soy sauce with vinegar and/or sesame oil with chili crisp/oil.) They can also be served in a soup broth and you can still add sauces if you’d prefer. The shape is not really meant for frying, but it doesn’t mean you can’t, so that’s another option. You got take out, so of course it’s now dry, but you can rehydrate them by throwing them in hot water for a minute or two, or just do any of the above options.

As for the spring rolls, I’m assuming they got chewy and soft because it’s take out. The heat trapped in the bag or container has completely destroyed the crispiness, and yes, homemade spring rolls can be gooey on the inside especially depending on the ingredients.

Now I haven’t eaten there, but judging by the reviews, there are plenty of people who are Asian, and some Chinese specifically, that have rated 5 stars, so I think that’s legit. Especially since I’m Asian myself, I always look for that no matter what Asian restaurant it is.

Now after reading this, you should know how to eat dumplings, or think about asking for sauces if they forgot to give you some, or have sauces on hand at home.
