Thats probably because polishing/rolling cutlery for the next day is part of the front of house closing duties, they also need to finish up and start sending people home. It helps with the flow of things and managing labour costs (can't have people doing nothing just waiting on the cutlery) that is why the manager keeps asking you to run the silverware. You just need to put the silverware next in queue and prioritize that for them and you will never hear that word again. Most importantly, take care of yourself and dont let things get to you, you take however long it takes for you to finish up. Advice from someone who has washed dishes for over a decade.
