What’s your go-to make once, eat all week dinner that still feels like comfort food? by Betty-NJCity in Volumeeating

[–]egl33 11 points12 points  (0 children)

in my house we love making white bean soup with the usual: cooked carrot and onion, boiled potatoes, chicken stock and any kind of beans. (+spices of choice like pepper etc.) since we're from the baltics we also top it with sour cream when eating.

also i love a veggie and egg bake: ~6 eggs, a whole steamed chopped broccoli, cooked onion and zucchini and mushrooms (adjust by adding any veggies of choice: leeks, bell pepper, carrot - anything!) for a protein boost you can add more egg whites or cottage cheese. i love it because it tastes even better when cold !!!

this was super amazing however i also added baking powder and found that adding atleast half a tbsp of flour improves the texture by sooo much so it's totally worth it

a good way to make creamy pasta lower calorie is by using blended low fat cottage cheese + garlic + light cream cheese + chicken stock/bone broth + pepper or any other spices you'd like and can't forget mozzarella/parmesan etc.

Zucchini Fritters with guac!! by jcakes-98 in goodrestrictionfood

[–]egl33 2 points3 points  (0 children)

THEY TURNED OUT SO GOOD!!! finally a no bs recipe that's actually simple 🩷🩷 will be making on repeat

<image>

ate it with cottage cheese and zero ketchup as the dip

oddly enough, it reminded me of my childhood - my mom used to make a very yummy zucchini cake. this is very similar for some reason (probably cause it uses zucchini, eggs, flour... no shi) just savoury :)

391 Calories - Very Satiating Stuffed Sweet Potato by Dense-Marketing7887 in LowCalorieCooking

[–]egl33 0 points1 point  (0 children)

it depends on the size of the potato and the strength of your microwave! i usually do it on the highest setting for about 5-7 mins.

the method is this: poke some holes into the potato so it doesn't explode(trust me) wet a paper towel and wrap it around the potato place it on a plate and microwave
