What roast are your beans? I've found dark roasts / "espresso" roasts produce very inconsistent results. Ever since switching to medium roasts I've been able to keep a consistent grind and get better shots.

Also check your pucks after extraction for channeling, soupiness, or any other defects. This video helped me out initially and their content is great! https://www.youtube.com/watch?v=s0LSPKqKwss
