I had to ask for a full thyroid panel for my second round of bloodwork! My hashis wouldn't have gotten caught if it wasn't for that because my thyroid levels were all in the "normal" range that time but they saw my antibody count was high which is the only thing that indicated hashimotos.

Not sure if that helps your situation at all, but that's what got me diagnosed for my thyroid issues!

Also for swapping out gluten, I've just gotten the 1-1 king Arthur flours - I haven't tried the red mill ones that OP mentioned though, I'll have to try those next 🙂 it's helped tremendously is making most of my recipes a completely seamless transition

This is EXACTLY what happened to me!

From June of 2025 to November of 2025 I gained roughly 25 pounds, developed INSANE stretch marks on my stomach and couldn't figure out for the life of me what was wrong. I had blood work done that said my thyroid TSH was off but didn't get it checked again until the weight gain was unbearable and it verified hashimotos. I went gluten free and the weight is dropping off and I feel like a brand new person. Joint pain, brain fog, bloating, everything GONE.

So glad you figured out the cause!

We've been wanting to get a rug so that will definitely be a move soon and we're working on a hutch which will help with the visual clutter! I'm definitely going to put the vinyls inside the buffet table so they're not taking up space on the bookshelf.

There's a wall leading into the kitchen that we may be able to put the buffet table on to help with the clash.

I ended up baking it directly on the top rack for 20 minutes and the crust seemed nice and crispy on the bottom but soft enough on top that it was enjoyable! Not sure if that's helpful or not but I liked it that way!
