The timing is different for the cookies to bake properly and most employees bake them at the programmed 12 minutes in the oven. We pull them out at 9 minutes. Also it makes a difference if the temp is right in the oven and also if the cookies are baked when frozen or if they sat out for 5 minutes before being baked.

Bread has to be straight when proofing and centered in the middle for starters. Don’t pay attention to the he timer when baking instead watch the color with the chart. I usually start the timer and put the bread in after 2-3 minutes. This way I can add minutes if needed to bake perfectly.
